The Associated Press reports that Wisconsin-based Emmpak Foods is expanding its recall of ground beef that may contain the E. coli bacteria to some 2.3 million pounds of beef sold nationwide.

Some 40 people in three midwestern states already have gotten ill, and their illnesses have been linked to the beef. Emmpak recalled 416,000 pounds of ground beef last week, that food safety officials have now deemed that the recall needs to be more sweeping.

The beef was sold in grocery stores, hotels, restaurants, and other food institutions nationwide.

The US Department of Agriculture (USDA) has recently declared its intention to get tough on E. coli, and based on how many reports such as these that we’ve written in recent months, it’s about time.
