The Christian Science Monitor reports that a Guatemalan fast food delicacy called Pollo Campero chicken is the hottest thing in the Houston market. When a new Pollo Campero restaurant opens in the city, it causes traffic jams and long lines similar to those seen when a Krispy Kreme doughnut franchise opens.

But more significantly, according to the Monitor, the popularity of the dish illustrates the growth and importance of the Hispanic population in the US.

The emergence and growth of the Hispanic population -- and the wide number of cultural variations within that segment -- is something that every retailer has to pay attention to. It’s an expanding source of both customers and employees.
